Chula Vista Brewery was founded by Timothy J. Parker, and his wife Dali, as an homage to their two children. Their vision is that one can enjoy a quality drink in the local neighborhood partnering with local businesses to enhance the surrounding business area. Upon running one morning during the 3rd Avenue strip in the heart of downtown Chula Vista, Timothy saw a vacant storefront, he walked up to the windows and envisioned his dream of bringing great quality beers to his neighborhood. South San Diego was an area significantly lacking craft beer; and San Diego has exceptional craft beer, but it was hard to find in our community. Timothy, being a home brewer and having had the opportunity of traveling around the world thanks to his military career, knew through his personal experience that beer brought people of all backgrounds together.
Tim is a Chicago Southside born and raised native who grew up in the projects. He moved to San Diego to pursue a career in the U.S. Navy. He met his lovely wife in 2002, and was introduced to Chula Vista by her. Since then, he fell in love with Chula Vista, and the small town feel it offers while in the big city, and has since then seeded his roots here. They have two beautiful boys, and two dogs they cherish their time with. Still as an active duty member of the United States Navy, he operates the brewery with the help of his wife, Dali Parker.
Dali Parker has lived most of her life in the South Bay and comes from an administrative and healthcare background with over 17 years of experience in management. Her passion for beer and great customer service has allowed her to manage the work-life balance with her husband and kids, and create a thriving business in her community. One of her main focuses is the customer, she firmly believes in having a relationship with them and that open dialogue is important. Talking to the customer, letting them know why the beer they are drinking is special and hearing their feedback is what helps Chula Vista Brewery succeed. On any typical day, you will see both Tim and Dali hands-on at the bar pouring or walking around the brewery engaging with guests. They want to produce what the brew-lover would like to drink and hope they find it at CVB.
Started as a bartender with Pizza Port upon Ocean Beach opening in May 2010. Worked way up to delivery driver and eventually assistant brewer under Mike Aubuchon at Pizza Port Carlsbad. Was offered oppurtunity to move to "sister brewery", the Lost Abbey/ Port/ Hop Concept, in December 2013. Jumped at the chance to further my growth and knowledge of beer making on a larger scale. Was an integral member of the brewhouse, cellar ops, and barrel blending team. Bittersweet to "leave the nest", I love and owe a lot to every brewer I worked with in my 8 years in the Pizza Port/ Abbey fam. I am looking forward to this next challenge of being the head guy and applying everything I have learned from those brewers. Only achievements (so far!), are the shared medals over the years at the Lost Abbey/ Port Brewing.
My beer experience started with Pizza Port in 2004 as a busser, stocker, and eventually bartender. In 2007, I was offered the opportunity to join the brewing team which consisted of Jeff Bagby, Brandon Edwards, Noah Regnery, Yiga Miyashiro, and Greg Peters. At first, I was in charge of washing kegs, selling/delivering beer, CIPs on tanks, etc. I worked closely with the rest of the brewing team and learned a lot from my colleagues. Slowly I was taught new tasks, like yeast handling, ingredient recognition, and quality control. After four years of moving up within the brewing team, I was offered the Head Brewer position at Pizza Port Carlsbad; there, I had the opportunity to work with a new assistant, James Hodge- you might have heard of him. During the next three years, I really got comfortable with my own brewing style. I received a gold medal for Twerp Belgian Blonde and a bronze for 547 Haight St. Imperial Red at the Great American Beer Festival in 2012. That same year I received two medals at World Beer Cup (the biggest international brewing competition). When Yiga Miyashiro moved forward in his brewing career, I was put in charge of brewing at Pizza Port Ocean Beach. I went on to win 7 medals at GABF during my time at OB. In 2016, I moved to Pizzas Port's production and canning facility in inland Carlsbad. During my time as a Head Production brewer, I've managed teams of up to 15 brewers and brewed 36,000 bbls of beer within a year. In 2018, I made the move to be head brewer at the Bell Marker Brewery/Artisanal Brewers Collective, in downtown San Diego. In my short time there I was able to capture gold at the California State Fair, San Diego International, and Los Angeles International Beer Festivals.
Pizza Port and The Bell Marker/Artisanal Brewers Collective were amazing companies and I am so thankful for all of the opportunities I was given. I look forward to working with my old colleague, James Hodges, and can’t wait to make some awesome beer. I'm beyond excited to join Chula Vista Brewery and see what the future holds. I don't have a favorite style of beer to brew but I like brewing IPAS, Stouts, Lagers, Belgians, Barrel Aging, just as much as I like drinking them.
